The Chocolate Babka is a delicious braided bread that you can easily make and enjoy in the comfort of your own kitchen! Rich and sweet with swirls of chocolate and bits of crunchy cacao nibs, it makes for a chocolicious treat!

Dough
POOLISH :
25g of APF 25g of Water 2.5g of Yeast
450g of APF 100g of Sugar 100g of Egg Yolks 100g of Milk 100 g Softener Butter 3 g of Yeast 5 g of Sea Salt 50 g of Water
Mix all the ingredients of Poolish together and let it rise for 3 hours until you obtain a bubbly texture.
Mix all the ingredients together with the poolish EXCEPT BUTTER.
At low speed, mix everything together until you obtain a smooth dough.
Add butter little by little.
Finish to knead the dough at medium speed.
Remove the dough and place the dough in the chiller and leave it overnight or at least 8 hours.
Roll the dough, add the filling, shape it and let it proof for another hour.
Brush it with Egg Wash and Cook it for 25-35 minutes at 160°c.
Make a syrup with sugar and water.
Brush the babka with it.
Ganache Filling
250g of 55% Dark Chocolate 300g of Cream 20g of Butter
Boil the Cream, pour it on the Chocolate.
Add butter.
Blend it to get a smooth, silky consistency.
Keep it chilled.
Sprinkle some cocoa nibs on the top after spreading the Ganache on top of the Dough.
