The Chocolate Babka is a delicious braided bread that you can easily make and enjoy in the comfort of your own kitchen! Rich and sweet with swirls of chocolate and bits of crunchy cacao nibs, it makes for a chocolicious treat!
Ingredients | Dough
POOLISH : 25 g of APF 25 g of Water 2.5 g of Yeast
450 g of APF
100 g of Sugar
100 g of Egg Yolks
100 g of Milk
100 g Softener Butter
3 g of Yeast
5 g of Sea Salt
50 g of Water
Steps | Dough
Mix all the ingredients of Poolish together and let it rise for 3 hours until you obtain a bubbly texture.
Mix all the ingredients together with the poolish EXECPT BUTTER.
At low speed, mix everything together until you obtain a smooth dough.
Add butter little by little.
Finish to knead the dough at medium speed.
Remove the dough and placecthe dough in the chiller and leave it overnight or at least 8 hours.
Roll the dough, add the filling, shape it and let it proof for an other hour.
Brush it with Egg Wash and Cook it for 25-35 minutes at 160°c.
Make a syrup with sugar and water. Brush the babka with it.
Ingredients | Ganache Filling
250 g of Auro 55% Dark Chocolate
300 g of Cream
20 g of Butter
Steps | Ganache Filling
Boil the Cream, pour it on the Chocolate.
Add the butter.
Blend it to obtain a smooth, silky consistency.
Keep it chilled.
Sprinkle some cocoa nibs on the top after spread the Ganache on top of the Dough.
