Tree-to-bar process means that our chocolates are sourced from and made in the country of origin. In addition, it means we are involved in every step from the cultivation of the cacao tree to the processing of the beans all the way up to packaging and retailing the product.

Single Origin chocolate means that your chocolate comes from cacao beans that are sourced from one specific place. This highlights the unique terroir of the location and promotes direct trade and transparency.

Single Estate, on the other hand, means that the cacao beans used for the chocolate come from one specific farm or area within an origin.

Single Variety means that the beans used for your chocolate are only made from one variety or clone of cacao sourced from 4 - 5 different farms.

The percentage refers to the amount of cacao present in each bar. The higher the percentage, the stronger the cacao flavor in the chocolate.

The couverture we make only contains 100% cacao butter and no other vegetable fats. In contrast, compound is made with other fats to lower cost as it uses less expensive vegetable fats such as palm oil. The difference in taste and overall quality of the two types of products is significant!

Yes, our Couverture Coin & Block and Cacao Products are perfect for both cooking/baking and you can eat it as it is.

We recommend our 77% Dark Chocolate, 85% Dark Chocolate Mana, 85% Dark Chocolate Regalo, 100% Dark Chocolate Saloy and our 100% Unsweetened Chocolate Tablea. Our Cacao Nibs and Cacao Powder also contain a lot of good fat and fiber, making it perfect for those on a keto diet.

Yes, all of our products are gluten-free.

We use local cane sugar for our products. We use relatively less added sugar in our bars than many other conventional snacks. We also use organic-certified muscovado sugar for our Reserve collection.

Yes, all of our 100% Unsweetened Chocolate Tablea, Cacao Nibs, Cacao Butter, Cacao Powder, and Dark Chocolates are vegan. We also offer vegan gelato and treats.

Our products are currently not yet certified organic. While most of the cacao farmers we work with are organic “by default,” which means they do not apply any organic or inorganic inputs, they still lack the proper practices and certification for organic. To resolve this issue, we are working hard with one of our partner farming communities to convert to organic farming practices through our Organic Conversion Program. We are aiming to get the cacao beans certified by 2022.

Nibs are crushed and ground roasted cacao beans. This product is considered a super food rich in antioxidants, minerals and fiber. It is incredibly versatile and can be used as a healthy topping or a snack in itself.

The gray streaks are called fat bloom and are caused by rapid temperature changes in the chocolate, usually when the chocolates melt or get warm then cool without being properly tempered.

The streaks are harmless swirls of cacao fat that have risen to the surface of the chocolate due to improper storage or handling. For crystal-like formations on the surface of the bar, those are “sugar bloom.” In both cases, the chocolates are still safe to consume, but the texture and mouthfeel have changed and will seem more brittle and rough. We suggest that you melt these chocolates by baking/cooking with them or making your own drink.

However, if there is mold or anything that’s furry on the surface, it is an indication that the chocolate got damp and should not be consumed.

Not exactly. There are a lot of factors to consider when crafting chocolate and its quality diminishes if any of the steps are overlooked.

Taste is still subjective and depends on your preference. We make a wide range of chocolate suitable for everyone’s tastes!

Our chocolate products are best stored between 16 to 18 degrees Celsius, away from direct sunlight, and protected from high humidity.

Open chocolate should be stored in an airtight container.

You may also store the chocolate in the refrigerator. We recommend taking the chocolate out of the refrigerator between 10-15 minutes before eating it. And make sure that opened chocolates are stored well with plastic wrap or in a separate container so they do not absorb odors.

We do not recommend freezing the chocolates because rapid temperature changes negatively affect the quality and cause it to develop fat bloom (with gray or white streaks on the surface of chocolate).

If you notice any signs of fat bloom on the chocolate, please bear in mind that it is still safe to eat but the mouthfeel and texture will be different than normal.

It is also recommended to naturally warm up the chocolates at room temperature for at least 20-30 minutes before consumption.

This is what we call fat bloom. This happens whenever there is a rapid temperature change causing the cacao butter to separate from the cacao mass.

If you notice any signs of fat blooming on the chocolate, please bear in mind that it is still safe to eat but the mouthfeel and texture will be different than normal.
